A Dish of Fish Intestines

Based on a recipe from Gilani Cuisine

Sweet fish intestines
2 tbsp plain flour
4 tbsp vegetable oil
Seville orange or lemon juice as desired
Salt and pepper

Preparation and Cooking
Gently clean the fish intestines in plenty of fresh water. Leave it in a colander to drain the excess water. Sprinkle some salt on it and leave it aside. Season the flour with salt and pepper and sprinkle in a layer on a plate. Heat the oil in a frying pan. Take the intestine and roll it in the flour. Shake the excess flour off and fry on all sides in the hot oil until crisp. Serve with the orange or lemon juice on the side.
