Kapoor Fish

Based on a recipe from Gilani Cuisine

1 Kapoor fish
5 tbsp vinegar
2 tsp sugar
Half a head of garlic
1 tbsp plain flour
Salt and pepper
4 tbsp vegetable oil


Preparation and cooking
Gut the fish, scrub off the scales and cut off the fins. Wash and dry it and cut into two fillets. Sprinkle lightly with flour and fry in 2 tbsp of oil. Place the pieces in a deep frying pan with the vinegar on low heat with the lid on. Crush the cloves of garlic and fry them in the rest of the oil. Add to the fish and mix the sugar in the sauce. Continue to simmer gently until the sauce thickens. Serve with plain rice.
