Soof Fish

Based on a recipe from Gilani Cuisine

1 soof fish
2 egg yolks
4 tbsp Seville orange or lemon juice
2 tbsp plain flour
Salt and pepper
4 tbsp vegetable oil


Preparation and Cooking
Skin and debone the fish. Cut it into large pieces. Wisk the egg yolks and orange or lemon juice in a bowl and marinate the fish in it for about an hour. Season the flour with salt and pepper and sprinkle in a layer on a plate. Take the fish pieces out of the marinate one at a time and coat each side with flour. Heat the oil in a frying pan and fry the floured fish pieces in it until crisp. Serve with cooked vegetables or a salad.
